My favorite food is peanut butter. 

Ask my family—they know mom “needs” her peanut butter.

But what is a girl to do about peanut butter cups when she goes off sugar and starts to follow the Trim Healthy Eating plan

Well you make your own. 

It’s really not that hard.  The main difference is in the taste.  I like to use unrefined coconut oil and it has a slight coconut taste.  So if you don’t like coconut(like my hubby) you can buy refined coconut oil that doesn’t have any flavor.

 

 

Coconut oil has a lot of healthy benefits so I make sure that I have some pb cups ready for snacks for HEALTH reasons(yeah that’s the reason uh huh suuuureee)  You do need to keep them in the freezer because coconut oil becomes a liquid not a solid in temperatures above 70 degrees.

If I haven't made a batch of my homemade peanut butter then I like to use the Kroger brand peanut butter because it only has 2 ingredients. 

Peanuts and salt.  That's it.  No added anything. 

Small batch vs. Large batch

The recipe below is for a small batch.  I NEVER make just a single batch.  If I did I would be making it every week.  I'm big into doing my cooking in batches.  When I make my THM drinks for the week I do several batches.  I do the same thing for peanut butter cups!

Homemade Healthy Sugar-Free Peanut Butter Cup Recipe

(number of cups varies depending on size of mold used)

Ingredients

Bottom Layer:

2 T coconut oil
1/4 c smooth natural NO SUGAR peanut butter
1 tsp vanilla
1/4 c cocoa
2 pks stevia, or 15 drops liquid stevia or 5 tsp ground xylitol

Top layer:

2 T coconut oil
1/4 c smooth natural NO sugar peanut butter
1/2 tsp vanilla
1 pkt stevia, 7-10 drops liquid stevia or 1 T ground xylitol

Directions

  1. Melt the coconut oil.  Mix in the peanut butter and melt a little more.
  2. Add the xylitol, vanilla and cocoa and mix well.
  3. Pour in to silicone molds.  I use small and large sizes.
  4. Chill for 30-45 minutes.  
  5. While you wait you can mix up the peanut butter layer.
  6. Repeat instructions above but do not add any cocoa
  7. Pour evenly over the chilled chocolate layer.
  8. Chill another 30-45 minutes.
  9. Eat and enjoy!
