Grandma's Pink Cherry Salad

Holiday food always makes me feel a bit nostalgic. Thanksgiving was a huge event at my grandparents with so much food that we couldn’t eat it all. My family had lots of amazing cooks who brought their best to share. One recipe that my mom always made was what we called “Pink Salad” and while it was pink there was no “salad” in it. This is an easy, sweet and fruity recipe that can be part of your meal or dessert. Grandma's Pink Cherry Salad has had many names in our family because usually the maker’s name is attached to it like “Judy’s Pink Salad” and then it would become “Kim’s Pink Salad” as the maker changed.

Do you know what my biggest problem with raspberries is? Buying them. They are so very expensive! We have solved that problem by growing them ourselves.  Just a few plants can give you an abundant harvest!  Here's what I picked today (after not picking for several days) and what we have in the freezer! Crazy but I love it!!!

Berries are the thing here. We recently transplanted over 100 raspberry plants and before that we moved a TON of strawberry plants from the raised bed strawberry patch. This week my daughter has been picking every evening. We’ve got a great start on getting our years worth of strawberries in the freezer. So in honor of Memorial Day and the sweet berries that we’ve been picking, I want to share this low fat sugar-free muffin recipe that we’ve been enjoying. There is even a gluten free version of these Red, White and Blueberry muffins!

My yearly goal with our berry patch is to grow enough organic berries that we don't need to buy any in the off-season. In 2016, we did it with strawberries and raspberries!!!! My next garden adventure is to find out if my soil will work for blueberry plants.

Low Fat Red White and Blueberry Sugar-free Muffins

Ingredients

  • 1 c sprouted wheat flour or GF oat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 c xylitol
  • 1/2 c almond milk
  • 1 T melted butter
  • 1/4 c egg whites
  • 1/2 c diced strawberries or raspberries
  • 1/2 c blueberries

 

Directions

  • Preheat oven 375 F
  • Mix flour, baking powder, salt, and xylitol.
  • Add milk, melted butter and egg whites and stir.
  • Gently add berries and stir.
  • Line a muffin pan with paper liners or use a silicone muffin pan(I love these!)
  • Use a 1/4 cup scoop to fill muffin cups
  • Bake for 15-20 minutes or until tops are lightly browned.
  • Cool on a wire rack and enjoy!

This recipe makes 6 muffins and we regularly double the recipe! 

***For my Trim Healthy Mama friends this recipe would qualify as an E muffin!  I like to pair it with a smoothie to get a little more protein!***

The search for easy quick HEALTHY lunches and meals is ongoing around here.  I'm still working on our families healthy eating reboot. One of my challenges is actually planning to cook for our lunches. Sandwiches are my son’s standard daily lunch but I want him to be able to make other recipes. So I'm on the war path.  He learned to make Low Carb Freezer Chimichangas and those served us well in November and December. We just did another batch to restock. Now it is time for a new recipe(to him) Chicken Quesadillas are easy and quick to fix. Plus he loves them.

Finding quality meat has been one of those “adventures” that gave me a headache for MANY years! If I could find a good sale at a local grocery store I would buy 10-20 pounds of meat to put in the freezer but with a family of 6 that meat seemed to disappear all too soon. That is why I am so excited to have found a way to get excellent quality beef at a reasonable price.
